It took me a long time to get up the courage to tackle the art of macaron making. The methods here and flavor profiles are the real deal and yes, they are expensive to make. But the results make the complicated process and the price worth it. If your goal is trying to create some of the best macarons you'll ever eat, share, or sell, this book will get you there.As other reviewers have noted, the description of making the Italian meringue is vague in the recipes, but the introductory section of the book explains in painstaking step-by-step photos how to make each element and what it should look like. Adjustments may need to be made depending on your ingredients and environment. The recipes for the fillings alone (which of course are the best part of the macaron), is worth the price of the book. Some favorites macarons from the book include Bitter Chocolate, Americano (grapefruit), Lemon, Coffee, Salted-Butter Caramel, Infinitely Chocolate and Infinitely Vanilla.

I wish I’d seen the two reviews that mention this — the kindle version is beyond crap. Sentence type overlaps so you can’t read the words/ingredients/instructions; words/chapter headings are cut off — it’s not only dreadful execution of a digital book, it’s inexcusable at this price. It’s useless.

I just purchased "Kindle" version of that book but it is unreadable. The sentences overlap, words are cut on the edges of the pages. Non of the usual Kindle features don't work such as magnifying etc. And I tried on many other devices such as Ipods and phones. It looks like a cheap scan. There is no option to receive any refunds.

Pierre Herme has done it again. This book offers tons of macaron recipes with lots of glossy photos and perfect quality paper. This book is visually stimulating and inspiring. Macarons are easy to make once you figure out your environment. If you want to impress others with your baking skills and want to give a food gift, buy this book. Macarons were created at Laduree in Paris originally. However, Pierre Herme's macarons are just pure fun and so yummy. If there is one macaron cookbook, this is the one to buy.

I tried many methods to make this elusive cookies and every time I was disappointed with the results. This is the most comprehensive and well written treatise on the process, with excellent recipes and tips. I've been fortunate to visit his boutiques and eaten his Macarons and I can attest to the accuracy of his recipes in contrast. Not in vain Mr Hermé is called “the Dior of desserts”, “the Picasso of pastry-making”.

I bought this book eventhough I know how to make french macarons already. I just want to add it on my collections. I truly love this book, great pictures and really have good filling recipes.Anyway, I can understand why the others gave it a bad reviews. For you to actually learn how to make proper macarons, either watch a step by step video (has to be very detail), or take a class (which I did). There's some major technique details that you have to learn, and reading a recipe online or books are not going to help. Even when I took the class, I wasted 3 batches when I did it on my own. And if you are seriously wants to learn, invest on a scale. U.S. measurements aren't going to cut it. You need to measure in grams to get an accurate results. And from experience, Italian meringue method is better than French or Swiss meringue method.. And I agree with "Carmen Adorno". This is a very delicate cookie so "Repetition" is the key. I always take orders from my friends because it gives me practice.

About the Author

Nivaldo Tro is a Professor of Chemistry at Westmont College in Santa Barbara, California, where he has been a faculty member since 1990. He received his Ph.D. in chemistry from Stanford University for work on developing and using optical techniques to study the adsorption and desorption of molecules to and from surfaces in ultrahigh vacuum. He then went on to the University of California at Berkeley, where he did postdoctoral research on ultrafast reaction dynamics in solution. Since coming to Westmont, Professor Tro has been awarded grants from the American Chemical Society Petroleum Research Fund, from Research Corporation, and from the National Science Foundation to study the dynamics of various processes occurring in thin adlayer films adsorbed on dielectric surfaces. He has been honored as Westmont's outstanding teacher of the year three times and has also received the college's outstanding researcher of the year award. Professor Tro enjoys surfing, biking, being outdoors with his family, and reading good books to his children.

Same exact stuff as newest edition just in different order. Seriously. Unless you have to buy MyLabs/Mastering, save yourself a million dollars with this puppy. Even if you have to buy online lab, get this too because the online textbook interface can be frustrating to navigate.

This book is well written and easy to understand without "dumbing down" the content. Good examples that make you understand Chemistry. Good amount of text vs sidebar info to keep you reading. Good use of questions with answers to test your reading of sections. Very nice binding, paper and size for a textbook.Thank you! I bought the older version because it was inexpensive and covered the same material, i.e. Chemistry. My daughter is using a newer version of this book at one of the top 5 engineering schools in the US.

Generally, this book is good and cheap compared with other chemistry textbooks. However, it also contains a lot of mistakes compared with other textbooks. Since this is a chemistry book, those mistakes are unacceptable, but most of them are in the answer key. The best thing you can do when solving problems of this textbook is checking it with your classmates or your instructors.Warning: This book provides a definition about the valence electrons which I can't say it's totally wrong but it is different from the other textbooks. YOU have to check with your instructor about this before you do any tests.FYI, I got hard cover version of this book with only $33 including shipping fee.Overall, I can tell that your chemistry knowledge will not be violated if you use this textbook even though there are some mistake.For someone who studies at EVC, you will save some money if you buy this and study Chem 1A and Chem 1B, but it doesn't have chapter 24 which is used in Chem 1B (just one chapter). If you just need Chem 1A, you should buy the customized version sold at the bookstore.

I like this textbook compared to most. Practice problems very useful. This edition is almost exactly identical as the newest one, don't waste your money is your Professor demands the newest one.

This is my favorite Chemistry book and I have 5 Chemistry books. I wrote and highlighted all over it and I still love it.

compared to other chemistry textbooks I have, this one is lighter, cheaper and by far the most organized and easiest to read and understand. All of the important topics are clear and recognizable and so are the practice and sample problems

Not the worst textbook, but this is a prime example of why education fails students with an interest. The guilty party isn't always the writer(s) either. Do you need to cram for chemistry? Guess what? The cramming didn't begin with you; it started with either those who standardize tests or curriculae and flows into texts (like this) and syllabi crammed full of content every term and every year. When you use a text like this for a class, you should be asking what's wrong with a world that expects people to cram for exams, cram too much info into one text, one term, etc. --then forget much of it, only to use the internet to "remember" it later on IF one gets a degree in science. For those who fail to get a science degree: it's not entirely your fault; it's a societal problem. Exhibit A is here: a course designed around Tro Chemistry. Good luck.
